PREMIER'S MOST NIMBLE CHEF'S KNIFE

A chef’s knife is a personal choice. That’s why Shun offers so many different lines and blade lengths. For instance, in the same way that some cooks prefer a longer chef’s knife, others prefer a shorter length. For cooks who enjoy the lightweight nimbleness of a shorter blade, we offer the Shun Premier 6-in. Chef’s Knife. Of course, it performs all the tasks for which you choose a chef’s knife, from slicing, dicing, and chopping to making rocking cuts through herbs. Yet it also offers the quick, agile performance and high degree of control that a slightly smaller knife can provide.

The Shun Premier 6-in. Chef’s Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

  • A smaller chef’s knife for quick, nimble performance
  • Hammered tsuchime finish helps release food easily when cutting
  • Hand-sharpened 16° double-bevel blade (32° comprehensive)
  • Steel: Proprietary VG-MAX cutting core, 32 layers each side stainless Damascus cladding
  • Handle: Contoured walnut-colored PakkaWood®
  • Blade length: 6 in. (15.2 cm)
  • Handcrafted in Japan

Shun Premier

Shun Premier calls to mind the handcrafting techniques of ancient Japan yet offers performance born from the latest advances in cutlery design and technology.

High Quality Steel

The Shun Premier knife boasts a cutting-edge VG-MAX core, the newest addition to the VG line of "super steels." This advanced material is highly resistant to wear and corrosion while maintaining an exceptionally sharp edge. The knife's core is supported and protected by a stunning Damascus cladding consisting of 68 micro layers, which not only enhances its appearance but also provides additional strength and durability.

Outstanding Sharpness

Shun knives excel with thinner, lighter, and sharper blades. The 16° cutting angle per side (32° comprehensive) achieves outstanding sharpness and accuracy, enhancing your cutting efficiency and longevity.

Traditional Techniques

Showcasing traditional handcrafting techniques. These knives feature a striking hamon, an alluring wavy line where the different steels meet. The blades are meticulously ground to a quick taper edge, allowing for swift and efficient food movement. Additionally, the beautiful hammered finish, known as tsuchime in Japanese, enhances food release during cutting.

PakkaWood Handle

All Premier knives feature a robust and moisture-resistant handle made from Walnut Pakkawood, a premium resin-impregnated hardwood. Its contoured design offers a comfortable and secure grip for both right-handed and left-handed users. The handle's embossed end cap adds balance and enhances its aesthetic appeal. Additionally, the integrated tang of the knife ensures stability and balance during use.
